You’ll gradually unlock entries in this through normal play as you encounter new enemy types in new areas. Each boss will unlock a new entry as well. The final bosses are the last two needed and the achievement will unlock after defeating them.

I had a weird thing with this where it jumped from 84% to 100% when defeating the final boss (and the Achievements popped). This is in the Bestiary from the menu - thought it had glitched, but didn't have to worry in the end.

The same thing happened to me as Raziel above. My bestiary percentage was 83/84% going into the final boss fight(s) and as soon as I beat them, this achievement popped. Very strange, but I’ll take it!
