At a certain point in the story, Li Hong will start threatening Uncle and Auntie Niu in Zhouzi Village.

Revisit them a few times by leaving the area and returning. Give them money to settle their debt, then Li-Hong will demand to know how they got the money. Simply threaten to beat him and the achievement will unlock.

The next time that you visit this location Uncle and Auntie will have been taken away for questioning, but if you return again later they will have returned and Li Hong will threaten them again. This will allow you to unlock "Fight Fire with Fire" in the same playthrough.

I had a cutscene when I first got to the village, and I keep checking back but nothing's happening.
I'm now on chapter 3, which is well beyond "the beginning"

This can be done at the start of chapter 6.

Both of the missables are a little weird, it's like the story just ignores they even happened after you leave the screen for both. I wonder if originally you could only pick one or the other each playthough, but the devs later down the line changed it, so you could get both, even if the results are a tiny bit wonky.

Selecting the beat option here literally ends up getting the old couple arrested, but then you just leave the screen and come back and it's like it never happened.

Since Li Hong starts threatening Uncle and Auntie at the beginning of the game I spent a lot of time checking on them between every mission. This one actually starts after the temple fight. Instead of going to the Mausoleum you can go to their house and start the quest. You only need to leave once and come back to activate the event. Then you need to leave and come back twice (talking with the old man the first time) to be able to repeat it. Unlike the other missable achievement this doesn't need any money so you don't have to save for the whole game like I did.
