This is very easy to do, you just have to destroy your lander and rebuild it from a blueprint 3 times.
Create new run for this, then destroy your landed while keeping the pilot alive, a harvester will approach you and tell you they can rebuild this for you and a blueprint will now be in your inventory.
Just visit the harvester station (a different system), show them the blueprint and get a new lander.
Repeat and destroy it and get a new blueprint.
Do this a 3rd time and the achievement is yours.
