This method requires two controllers or two people over xbl.
The goal here is to win a game without capturing any enemy pieces. This can be attained through winning a local match without having to lay down a single piece.
Before starting the game press X at the game options screen to switch sides allowing the guest account to go first.
Once the game has started press B on the second controller to pass the turn and then do the same with the achievement controller.
All that's left is to press A to accept the terms of surrender and the achievement is yours!

I thought I had it during the story mode. I didn't capture any pieces, but the opponent did. I assume you both can't capture any pieces. (Can't confirm yet, because I'm still working through the story mode...)

This is the only negative vote I have on any of my solutions and surprise, surprise; it comes without reason. If I only knew what was wrong I might be able to fix it...

AdolphMarx's solution is quick and painless.
In case you want to win this by actually playing against the AI, as I did:
Play against the AI on the easiest difficulty.
The AI can capture your stones and the achievement will still trigger. Also, the AI can finish the game with "dead" stones in your territory. You just can't capture them during play.

This can be difficult to do against the AI. Luckily, you can boost it by yourself or online with a boosting partner while working on the three online-specific achievements. See High Five for more information.
