In Chapter 4, shortly after solving a puzzle by making a lily pad huge so you could cross a river, you will come to a section where a fish has flopped out of the water on the right hand side of the page. If you talk to the fish, you start a cutscene whereby you have to grab him so that you can put him back in the water.
Once the mini game starts, you will see the fish fly from one side of the screen to the other and you will need to time your button press so that you reach out your hand to grab him just at the right time.
For the achievement you need to catch the fish on your first attempt. To be clear, you don't need to catch the fish on the first time it jumps across the screen (you can let it jump across several times before you try your first catch).
For me, you want to time your button press when the fish jumps across closest to the bottom of the screen, and (obviously) time it when the fish is above your hand. Every time I tried to catch the fish when it was nearer the middle / top of the screen it would always slip out of my hand.
If you don't catch the fish on your first attempt, then as long as you do not initiate an auto save by heading off the top of the page to the next page, you can either select to 'quit' from the game menu (it should say your last save was several minutes ago) and then continue your game OR you can dashboard out of the game, quit, then reload - you'll load in on the same page and can start the fish cutscene / mini game again as many times as needed until you catch it!

In Chapter 4, just after solving the lilypad obstacle, you'll see a flopping fish on the side of the page. Go down through the little tunnel (marked with the dirt path on either side of the bridge walkway) to meet with it. You'll have a short cutscene where Jot primes himself to catch it, and until you press a button, you have not tried. This trophy won't be easy to get through chapter select. It's better to get it on your first playthrough. You'll have to start over from the beginning of Chapter 4 every time before attempting it, as replaying doesn't save your progress.
