After scoring a kill and harvesting your trophy, you will be awarded with a score. The scoring thresholds are as such
0 - 399 - No Rank
400 - 599 - Bronze
600 - 799 - Silver
800 - 949 - Gold
949 - 1000 - Diamond
It should be noted that it is not possible to score a gold rating on females of the following species:
Roe Deer
Fallow Deer
Whitetail Deer
Blacktail Deer

Red Deer

That is because, without a "Trophy Rating" the most any animal can score is 500 points, and since these animals do not possess the "trophy attribute" (antlers with the exception of boars (tusks)), they cannot score the required 800 points.

Quick Kill
This has the most flexibility. You can afford this to be as low as around 90% if the trophy rating is high enough (lowest I've scored gold on personally was with quick kill at 88%). You earn 100% quick kill bonus by dropping the animal on the spot (easiest earnt with a Thoratic Spine shot on the bigger game (Moose / Bison) or a neck shot with the smaller deer species.
Integrity
Integrity bonus is awarded at 100% by killing an animal with the "correct" caliber of weapon. The smaller the animal, the smaller the "permitted" caliber. For ease I have listed the maximum caliber allowance (for rifles only) below

Coyote & Roe Deer - Ranger .243 (Starting Rifle)
Whitetail, Blacktail, Fallow Deer, Black Bear & Wild Boar - .270 Huntsman
Red Deer & Roosevelt Elk - 7mm Regent Magnum
Moose & European Bison - Rangemaster .338
If you want to use a weapon other than a rifle, some testing / research will be needed to ensure you don't use too high a caliber.
Consecutive Harvest
Each time you start a new hunt you will start with this at 0, and it raises by 20% for each kill you harvest, after the first kill, so you will need to kill 5 animals before hunting for "trophy" scores
1st Kill - 0%
2nd Kill - 20% (this is your first "consecutive harvest")
3rd Kill - 40%
4th Kill - 60%
5th Kill - 80%
6th Kill onwards - 100% bonus
SCORING THE GOLD
With all of your bonuses at 100%, you now want to hunt (for ease sake) a male with a reasonable trophy rating
Without perks this can be difficult to establish, so as a rule of thumb you want to be trying to use the animals "difficulty" as a benchmark
A gold is possible in my experience once you hit the following difficulties (assuming 100% for all 3 bonuses)

Red Fox - 7 (Very Hard)
Roe Deer - 3 (Very Easy)
Fallow Deer - 4 (Easy) - See Screenshot
Wild Boar - 4 (Easy)
Red Deer - 7 (Very Hard)
European Bison - 4 (Easy)
As you can see from this shot, I had scored all 3 bonuses at 100%, and the animal was "Easy" difficulty. Comfortably within the Gold bracket of 800 - 949
Layton Lake
Coyote - 7 (Very Hard)
Whitetail - 3 (Very Easy)
Blacktail - 4 (Easy)
Black Bear - 7 (Very Hard)
Roosevelt Elk - 4 (Easy)

Quick question. Do the achievements stack? If I manage to get a gold rating before getting a silver - will silver unlock as well... or will I most likely get silver well before I score a gold?

You will most likely get a silver before a gold, but it's highly possible to get gold first
