Yes, an albino deer can show up randomly. They are EXTREMELY rare though. One of the other solutions talks about finding an albino red deer randomly

I have found a couple albino deer but was only able to kill one. They are extremely rare, but don't let that scare you. Check areas where you have seen Red Deer on the German map. I have only seen albino red deer (not Roe deer).
