There are 5 cars that you can steal, 3 of them are in story related missions. In order from easiest to hardest to steal they are:
Bolthorn 86 Classic: House 104
Aisan Cougar: House 101
Bolthorn Family MkV: House 201
Vulcan Spectre: House 205
Kubra GTS: House 207
I recommend going through the story normally so you have all the tools and skills necessary to steal the Aisan Cougar and the Kubra GTS. I've also made a video guide on how to steal each one if you're having troubles.

Incase anyone was wondering, this requires you to get the 5 different cars. It won't unlock if you steal the same ones multiple times.

To earn this achievement, you'll need to steal five cars. The five cars which have achievements attached to them are:
You can steal an additional car, the Vulcan Spectre (Orange), at Industrial St. 304. You'll need the car key or a Car Key Signal Cloner to steal this.
Once you've stolen five cars, you'll earn this achievement.
