How to unlock the Shrub-Seeing: Seen it all! achievement in Time on Frog Island - Definitive Guide
This is one of the six Shrub-seeing Achievements related to bringing the plant to certain locations on the island. There are 5 for certain locations and a 6th for having brought your plant to all 5 locations in a single playthrough.
This specific achievement unlocks after having brought your plant to all 5 locations, the Eastern Ruins, the Village, the top of the Mountain, and the Western Ruins and Dodo nest on the same save file.
This cannot be done immediately upon starting the game, and because of that, I recommend waiting and doing all of the plant locations at the same time, after you've opened the Northwest Island.
I've already posted solutions for each of the individual achievements, so I'll copy-paste those here. The video each solution references will be posted at the bottom of the solution.

Eastern Ruins
This is one of the six Shrub-seeing Achievements related to bringing the plant to certain locations on the island. There are 5 for certain locations and a 6th for having brought your plant to all 5 locations in a single playthrough.
This specific achievement can be done as soon as you start the game, though in my video below I wait to do all of the Shrub-seeing Achievements together on Day 8 of my first playthrough.
For this achievement, we need to carry it to the up a hill on the Eastern Island to where we can collect a purple gem. Obviously, this will depend on where you have placed the plant, but most likely it will be at the boat campsite, so head East from the camp along the beach, crossing two small rivers and finding a gate with a light purple color to it. Keep following the beach past it to come to a Bench near another campfire. Follow the beach North now until it turns East. There's a sign pointing across the water, and a hidden sandbar that will allow you to walk to the East Island. Walk across the sandbar and keep walking that direction when you reach the East Island to come to 2 flowers. The flowers will depend on if its Sunny or Rainy, but they will either be a Sunflower or a Rainflower. Descriptive, I know.
From these two flowers, head East through the trees and you should see a beehive on a tree to the North. Follow the path to the North by the beehive. This path winds through some pink flowers and at the top of the hill, you will unlock your achievement.

Village
This is one of the six Shrub-seeing Achievements related to bringing the plant to certain locations on the island. There are 5 for certain locations and a 6th for having brought your plant to all 5 locations in a single playthrough.
This specific achievement can be done as soon as you start the game, though in my video below I wait to do all of the Shrub-seeing Achievements together on Day 8 of my first playthrough.
For this achievement, we need to carry it to the central Village island where the Merchant's Cart is. Obviously, this will depend on where you have placed the plant, but most likely it will be at the boat campsite, so head North from the camp along the East side of the Farmer's House, following the paths North from it to reach the Village and pop your Achievement.

Top of the Mountain
This is one of the six Shrub-seeing Achievements related to bringing the plant to certain locations on the island. There are 5 for certain locations and a 6th for having brought your plant to all 5 locations in a single playthrough.
This specific achievement cannot be done immediately upon starting the game, and because of that, I recommend waiting and doing all of the plant locations at the same time, after you've opened the Northwest Island.
There are multiple ways to do this, but I recommend waiting, at the very least, until after you've done the "Who even needs keys" Achievement for getting an ice flower without opening the Mountain Gate. If you open the gate first it will void that achievement and you'll need a new playthrough to get it.
When you're ready to open the gate, go to the Eastern Island across the sandbar and head to the North, up a hill, to find a purple gem. Bring it to the gate to open it. If you need directions up the mountain, return across the sandbar and head Northwest from it to reach the Village. The path up the mountain from there is explained below.
With the gate open, grab your plant from your boat campsite and head North to reach the Village, Head East to find two bridges, one after another. Cross them and go North to start up an incline. Follow this West until you come to another bridge, but head North up an incline and follow the path East, hugging the Northern rock face, to reach another incline where the grass turns to snow. Follow this incline to reach the gate. Assuming you put the gem in, the gate is open, and you have a bunch of platforming to do. keep jumping up the platforms to get higher until you reach the top with a pink gate. Go to the Northeast of this and jump up a ledge, following it west and jumping across the gap to find the ice flowers and pop your achievement.

This was recorded on my full playthrough after I had already gotten the "Who even needs keys" Achievement and opened the gate. I go up the Mountain immediately after bringing the plant to the Village to unlock that Shrub-seeing achievement for there.

Western Island Ruin and Western Island Dodo Nests
To open the Northwest Island, you need to get the Carpenter/Lumberjack Frog to build a bridge to it. To do that, you need to finish his two quests, first. These Quests can't be done until Day 2, and then its going to take 5 or 6 days for the bridge to be built(I think it depends on weather, but I'm not certain). On Day 2 or later, go to the West of the Village. In the forest to the West/SouthWest of the Blacksmith's house is a clearing with a single stump in the middle. The Lumberjack left his saw here, so pick it up and return it to him. I've always found him in the area near his house(which is East of the Village, across the two bridges), but I don't know if he wanders farther than that.
Once you give him the saw, he'll thank you and chat again to find out he needs his hammer, too. If you found him near his house, head straight South, following the beach South and/or East(DON'T CROSS TO THE EAST ISLAND) until you reach a Bench near a fire pit. Near the small pier here is a hammer. Pick it up and return it to the Carpenter, who is likely in the woods East of his house now. Return it to him, then talk to him AGAIN. This will trigger him getting the wood necessary to build the bridge. From this point on, you just wait however many days it takes for him to build the bridge.
The bridge is North/Northwest of the stump where we initially found the Carpenter's Saw. Once done, grab your plant and cross the bridge. Immediately head straight North. You'll see some ruins on the ground with a circular cliff-face to the Northeast and a large body of water on your left. Go up to the land on the cliff-face to the ruins here to unlock the Shrub seeing ruins achievement.
From here, head Northeast and up the hill here, following it North to a cliff and then West to where the Dodo nests are to also unlock the Silly Birbs Shrub-seeing achievement.

This specific achievement cannot be done immediately upon starting the game, and because of that, I recommend waiting and doing all of the plant locations at the same time, after you've opened the Northwest Island.

Really good and comprehensive guide!
Just to add for anyone who might have messed up like I did; if you lose the shrub (I accidentally yeeted mine off of the mountain), it respawns by the painter (near your boat). It was just behind the easel.

Take your plant to all of the locations provided in the other Shrub-seeing trophies to unlock this one.
