The easiest way for me to win the X Division matches was to get on the cables early in the match (the computer might pull you down at first, but that's fine). Get one or two successful grabs on the belt and move to the middle of the cable (away from the X) when the AI climbs the cables.
The AI will climb the cables to come after you, but if you're not by the X Belt the AI will change focus and go for the belt. While the computer is going for the belt go back to the center and kick the AI down. Get a few more grabs and move away from the belt when AI climbs back up. After 3-4 times the belt is yours.

The goal in Ultimate X is to untie the sexy red X that is suspended over the middle of the ring. Unlike the other championship events in this game, you're fighting a no-name guy so it isn't too hard to grab the prize and get the achievement.
The best thing to do is to let your opponent go for the X first; follow him up (press B near the turnbuckle to climb it, then LB+B to grab the rope.
When your opponent is trying to untie the X he is vulnerable; press the X button to start kicking him. After a couple of kicks, he'll fall back into the ring. Now, press the B button to enter into the untying minigame: hit the A button when the pointer is in the green section of the meter; each successful button press gets you one step closer to untying the X. You'll have to do it about five times to untie the X. If you miss a button press you have to start the minigame again, but the counter doesn't reset.
While you're attempting to untie the X, your opponent will be climbing along the rope towards you again; kick him to knock him back into the ring when he gets close. After he's back on the mat, press B to restart the minigame.
Repeat the above as often as necessary to unlock the achievement. It'll probably take around 3 - 4 minutes.
