UPDATE 8/24: The host must have all the tracks unlocked in order to let every player (including host) to earn the Globetrotter achievement. Also, this must be played on ranked match in order to make it worked.
To unlock all the tracks, you must win 200 races in single player mode. Every time you win 8 races, the track is unlocked. The best way to get easy wins to unlock all the tracks is to play single player > custom race > setup AI level to rookie or have a second controller > shadow mode off > cannon only weapon > knockout mode score to 5. Repeat this process until you unlocked all the tracks (or if you like to earn the Motorhead achievement, just win 20 more times to unlock the last car).
Once done it, setup a ranked match on each of the track of its side, then win the match (or let your boosting partner win in case of achievement trading).

can the achievement be won on any of the game modes?

No, only online ranked match. If you're having trouble on trying to obtain this achievement, try setting up the boosting session and hopefully he/she is interested.

Boosting Method

Go to Multiplayer>XboxLive>RankedMatch>Quick or HostMatch> if Host> HostSingleEvent
NOTE: Either you or the host will have to have unlocked all tracks prior, in order to get this achievement. See Motorhead achievement for info.
Set Speed to Turbo, Mode to Knock-Out,
Set Knock-Out Points to 5
Press Y to go into Customize. Turn Shadow off,
Weather off, and AI off, then press B to back up
because now you're ready to begin.
Have the winner hit the gas while the loser sits still.
As soon as they are eclipsed by the screen the winner will gain a point. After 5 pts. the race will end.
Now change the track to its reverse form and repeat for the rest, achievement unlocked.

There is no way this would take 15 minutes per person. Not at the rate you get points and how many tracks you have to go through.

Note: The host must have unlocked all the tracks!
Use the boosting thread and find a partner. Then set up a match with these settings:
- Ranked
- Track: Change between all of them (make sure you do the reverse ones to!)
- Speed: Fast/Turbo
- Mode: Knock-Out Mode
- Limit: 5
- Shadow Mode: Off
As soon as the match starts, hold 
to accelerate and get your partner to hold 
to reverse, this way it only takes 30 seconds each track! Return the favour for your partner on each track as you go along.
