Wolves are present in the first 4 levels of the game, in Peru. They are very easily killed and don't do a lot of damage. They also tend to jump at you to bite you.
So, for this achievement, you need to kill a wolf while your are both jumping. The best way to do it is to jump behind while firing, which is a normal way of avoiding damage. Actually unlocking the achievement is quite random, but a good place to get this is in the very first room of the 2nd level (City of Vilcabamba), where there should be 4 wolves.
Save just before just in case, enter the room and wait for the wolves to rush you, jumping around and firing. Should unlock immediately once the wolf dies.
