How to unlock the TR3 Flying Fox achievement in Tomb Raider I-III Remastered Starring Lara Croft - Definitive Guide
Done in TR3.
There are only a handful of ziplines throughout the game, and one in Croft Manor that needs using, and only two of them are missable unless you take some crazy routes through the stages.
One missable zipline is in Jungle, as there's a fork in the 'path' and one of them does not make use of one of later ziplines.
The other missable zipline is in All Hallows, and it's missable in the sense that All Hallows is a bonus stage that is only accessible when you have collected all of the secrets in the game. After finishing Meteorite Cavern and viewing/skipping the credits, you'll see your Final Statistics as normal (hopefully with 60 of 60 secrets), and then you will enter All Hallows right after.
Below is a breakdown of which stages contain ziplines and where, just so you can keep an eye out during the stage. You do not have to get them in one playthrough, so if you missed the Jungle one you could just quickly start a new game to get it.

Croft Manor
Ziplines: 1- Unmissable. At the end of the assault course. Can be done before, during or after your playthrough of the game.
India: Jungle
Ziplines: 2- Unmissable. Starts after the spiked wall trap near the beginning and leads to the other side of the river.
- Missable. After the stage's final secret (behind the three rolling boulders that start behind some greenery at the top of a hill), there's a section of water that has no current and no piranhas in it, and a small bit of land floating in the middle. To progress you can either take the underwater/lower path (which is quicker) or take the upper path. You'll need to take the upper path, so land on this small island and climb onto the tree branch above, in order to pull a lever. This lever opens a door nearby which you need to do a running jump from this island to land on some rocks opposite and climb into. Through here you'll be up on the treetops above the main river (with the piranhas, near the beginning). The zip line starts here and takes you to the other size of the waterfall area.
South Pacific Islands: Madubu Gorge
Ziplines: 1- Unmissable. Near the end of the stage, shortly after the section involving jumping over a bunch of rock and flame traps in quick succession, you'll end up having to jump across the river using various stone blocks placed across it. At the end of these jumps there a zipline into a room with a big chain in the middle.
London: Thames Wharf
Ziplines: 1- Unmissable. Right beneath you when you start the level.
Bonus: All Hallows
Ziplines: 1- Unmissable. You have to lower a grate so that you can use the monkey bars across over to it. There's a bunch of spikes beneath you as you zipline down, and if you hold on until the end you'll slide outside of the level/die. Remember to grab the key near the zipline before using it, or you'll screw yourself over and have to load a previous save!

This can be done out of order in different playthroughs. I missed the Jungle one in my first run, got the achievement when I returned there in ng+.
