To unlock both knife achievements, this has to be done in one life; it is not cumulative. Knife kills are performed by pressing 
when you are close to an enemy.
When you enter the junkyard, walk up to the first enemy to knife them, then maneuver around the cars and knife the second enemy (both have their backs to you). Walk forward and you will see the juice-man so knife him as well. Next, walk left and as you’re seen, an enemy will shoot at you. Avoid them by dodging (
or 
) and move down around the car so you flank them on their right side. Dodge into them and press when you are close.
Walk up the ramp and into the building. Beyond the first door is your fifth enemy, so dodge through the door and knife them when you are close. If you successfully knifed all five, the achievement will unlock.
