From the main menu choose Exhibition - Singles mode. The quickest way to get this is by then going down to the settings and changing games per set to 2, sets per match to 1, and difficulty: easy. Choose whichever character you like and work your way through every male character.

Depending on your skill, you may want to try to doubles mode. It is a bit more risky because you have to rely on an AI player, but you can defeat 2 players instead of just 1 in each match. Of course, set the games up just as described in Dysitis's solution.
