The easiest way I found is to use 8 pads (If you struggle with AI). If you have friends who can lend some.

with 8 controllers, you don't have to worry, take your time to finish the races and you are sure to win with 7 inactives players against you.

as Crazy Nikos 78 posted already and thanks for this if you have 8 Controllers you are good to go but most people dont have 8 Gamepads.
If you have a Win 10 PC you only need 4 Controllers to fill up the Lobby the other 4 are the Keyboard.
If you dont have more Gamepads you have to beat it legit.
