Bloodletting is a gauge that each army has which fills by winning consecutive battles. To max it you must win 9+ battles with only 1 turn of rest in between. As the gauge on a particular army rises it gains additional perks. But if you go 2 turns without fighting it will fall a bit. All the battles can be auto resolved.
I did this by entering the realm of the sorcerer and fighting the armies between portals. However, another good way would be to attack ogre bandit camps as they are very weak and spaced close together. Some things you could do to help out is activating "eternal war" via unholy manifestastion on your army to avoid losing a streak. This summons a weak army to attack yours. You can also close rifts for an easy win or use them to teleport to an area with more enemies.
This achievement is buggy and didn't unlock for me when I maxed the gauge. I needed to reload my save. Let the gauge drop a little and max it again for it to unlock.
