4th Stage with Cancellara from Saxo Bank is the best way to do this. Simply try to stay at 54 km/h the entire race and cut the two corners like you would in a racing game. The way that worked the best for me was so that I barely touched the grass and it slowed me down enough for me to make the turn without braking. It's gonna take some tries though as the AI times vary alot and sometimes they get unbelieveable times, but with some patience you should be able to get this.
