The combativity classification is rewarded for the racers that are alone at the top of the race the most of the time.
If you simulate, you will never get this trophy so you need to actually play the stages for this, but you can still fast forward. Make sure to pick UAE Team Emirates and have Pogacar in your roster; you want to select him in every race. Play only the yellow, green or red races; don't play the blue ones.
When playing a race, press
and select Attack then 
to fast forward. Do that constantly. Pogacar should race alone at the top for the majority of the race and that's what you want to do for this trophy. So do that constantly for the first few races, then at the end of each race you can see the combativity rankings (in kms), if you have a good lead you can simulate the next races but always be careful and check if someones catches you, then play another race and repeat.
Don't forget to play the last race (and fast forward) or you won't receive the trophy.
