The Yellow jersey is rewarded for being the overall leader. It is calculated with your time at the end of each stage.
The Green jersey is rewarded for the best sprinters, in each stage there will be mid-stage sprints and you earn points if you're among the first racers to pass the line.
The Polka-Dot jersey is rewarded for the best racers in Mountain; in each stage there will be points awarded if you're among the first racers to pass the lines in mountain stages.
You shouldn't worry about this trophy at all; if you pick the modified Pogacar recommended in the road map and simulate every stage (don't forget to play the last one to receive the trophy), Pogacar will automatically receive all these jerseys.
