This will bring up a list of the available games to play. Every game has challenges associated with it, and all are fairly easy to hit level 2 on. Some you can do it in one game, others you will need more than one game. All of the challenge totals are cumulative, they do not need to be done in one game.
Dolled Up :
Grenade Kills (30) and (200).
Just hit 100 grenade kills to hit challenge 2 complete. Should take 3 games or so.
Cardboard Theatre:
Targets hit (30) and (100).
Just hit 100 targets to hit challenge 2 complete. Should take 4-5 games.
High Noon:
Cowboys Bucked (30) and (100).
Hit shoot 100 cowboys to hit challenge 2 complete. Should take 1 game.
CAS Roundup!:
20mm Kills (100) and (300).
Use the 20mm machine gun to wrack up 300 kills to complete challenge 2. Should take 2 games.
Thread The Needle :
Stars Shattered (30) and (100)
Fire the rocket down the tunnel and hit 100 stars to complete challenge 2. Should take around 10-30 games depending on skill.
Flyswatter :
Golden Fly Kills (12) and (36)
Simply shoot down 36 golden flies for the 2nd level challenge to complete. Should take between 2 and 3 games depending on skill.
Once all challenge 2 requisites have been met, the achievment will pop.
You can track your progress through the mini game menu.
The DLC minigames are not required for this achievement.
DLC things are never required for a base game achievement list, it's not allowed by Microsoft.

For this achievment you reach level 3 in every challenge for Minigames.
Dolled Up: 200 Grenade Kills
To get this try to only use the grenade launcher. Try to also aim for big groups of enemies. If you are reloading your grenade launcher use the time to find a big group of enemies.
Cardboard Theater: 100 Target Hits
To get this faster use the Shell-Cam and right before you hit the target let go of Shell-Cam. If you can, aim for the bigger targets as you are trying to hit targets not get a big score.
High Noon: 100 Cowboys Bucked
Cowboys Bucked basically means infantry kills. For this try to get as many infantry kills as possible. Once the infantry stop coming, exit the game and start again. The kills still count toward your challenge.
CAS Roundup!: 300 20 mm Kills
For this try only using the 20 mm and only shoot infantry as the 20 mm isn't good against vehicles.
Thread the Needle: 100 Stars Shattered
For this make sure you actually hit the star and not just go through the hole the star is in. Hold 
back to slow down the rocket and push foward to make the rocket go faster.
Flyswatter: 36 Golden Fly Kills
For this just ignore all of the normal bugs and go only for Golden Flys. Get the Golden Flys in a group to get more Golden Flys kills for one bullet.
