This will be done over the course of a normal playthrough, but in case you want to grind it ASAP, see below (EDIT: Added Video Link).
This can be done while Validating a track in the Track Creator mode, and combined with the "Only A Hundred" achievement for crossing 100 finish lines.
From the starting gate, put down 6 Super Turbos (red turbo) in a straight line, followed immediately by the finish gate. Then go to "Validate". Run this 100 times by holding
and tapping 
constantly (to restart), and you'll get the achievement for 500km/h and finish line 100 times in about 5 minutes. The achievement will unlock as soon as you hit the required frequency, no need to save/quit.

This trophy will come naturally and very quickly. While 500kmh is fast, most tracks will have you getting to somewhere just over that threshold, so it is highly likely that this trophy will pop before you can complete the first set of campaign tracks.
