Balancing and tweaks to the game made the other solution outdated and unhelpful, so here's an improved version. If they do some more balancing and my setup becomes impracticable I will remove it.
First you need more power, so replace the engine in the back with a dragon engine. Doing so will make the car much heavier, so we need to tweak the weight a little. Remove the 2 block in front of the front engine and move the engine 3 cases towards the front. Move the suspension/direction/wheels one block towards the front. Add two 2x1 blocks behind the suspension to make the car longer and fill the back of the (front) engine with two 1x3 blocks. You won't be immune to slipping as it is mostly tied to how you land, but the handling is much, much better than anything else I've tried.

1st time with this car, no sliding on the mud or nothing so you can cut the corners and steer on the mud.

Replacing the engine in the back, removing the two front blocks and moving the engine at the front to connect the front wheels to the body was more than enough to make this easy. Thank you!
