Whenever you link up the engine cars with a freight train, just hop out of the engine car, and take several laps around the freight train.
Keep in mind, the game will prompt you to decide if you want to give up control or not of the train. Select 'no' and keep running laps around the train until it pops. Should take only a few minutes. You'll get this going for other achievements.
