Easy mode, six heavy hits.
Start of battle go towards him and roll under. Pivot to face him and do two heavy attacks.
He’s gonna swing alternating sides. So roll under, then back again and hit with two more heavies.
It’ll be a different attack, but you can still roll under, then back again to dodge and land the final two heavy shots.

The guide is basically dodge 
and heavy blows 
.
An easy way I found out was to stay in front of him, hit 2 heavy blows (+ damage be fast) and let him push you, that way he will use mostly a jump in which you will reposition yourself with the dodge, repeat this process and hopefully it will be about 2/3 of life. Take the opportunity if he tries to blow (be careful because he can and will get more aggressive from half to the end).

This is the boss for chapter 5, to beat him without getting hit try this:
Run towards him, use a heavy attack and imediatly dodge roll under his body and keep rolling to get some distance, switch stance 
and shoot him with the bow 
while you regain some stamina. Rinse and repeat.
Notes: after reloading checkpoint sometimes the character didn't obey my first commands, keep reloading if that happens to you.
Did this on medium difficulty, took only a minute. On highest difficulty will certainly take longer.
