Just got it; removed all my saved data and went offline (not syncing the saves while opening the game). Had to get the 30 squirrels again, but popped once I collected the last one and had restarted the game (while online). Good luck all!

For any future Squirrel hunters: the playlist linked does NOT contain all squirrels in the game. The locations of Yellowstone Caldera and Medieval Flair are missing. If you want to find all, I recommend Maka's video guide also linked in the Diamond Squirrel guide

This has bugged for me. Got the achievement for collecting all the squirrels but not this one, last one i need as well :( any tips to try and get it to pop?

Same, Pezwig! Got the achievement for all squirrels, but missed this one. I even opened a support case at Ubisoft, they told me that they couldn't do anything about this... Tips are welcome..!
