How to unlock the Trials Ninja achievement in Trials Rising - Definitive Guide
To gain access to Ninja tracks you must first get a gold medal on all the extreme tracks. (Thanks to oaksprout for clearing this up). However you don't need to acquire gold medals in stadium events, skill games, easy, medium or hard tracks.
Once you have unlocked the ninja tracks I would highly recommend using the helium bike as it handles a lot better.

This is actually not true, you only need gold on all of the extreme tracks to unlock the ninja tracks.

This is only a solution on how to unlock the tracks and not how to complete a ninja track.

To unlock Ninja tracks, you have to get a gold medal on all the extreme tracks.
It is not necessary to achieve gold medals in stadium events, skill games, beginner, easy, medium or hard tracks.
So the 8 Extreme tracks you need to get gold on to unlock the ninja tracks are:-
- Corky Construction
- Hong Kong Harbor
- Car Park Club
- Sewer Rat
- Desolate Dome
- Baikonur Base
- Klondike Gold Rush
- Inferno V
Once you have unlocked the Ninja tracks, your best bet is to complete White Belt using the Helium. With a bit of practise it's not too difficult.
For guidance, here is my 0 fault run on White Belt using the Helium:
