The birds in question are the Ostrich look-a-likes that only appear on the desert levels.
I found the trick is to run with spears out and try and make sure they don't charge at you, (this usually happens when the bird crosses the path of one or more of your guys). Just before you get level with them us

to move your people across them, slashing from the side if you will. (This is also the most successful technique I found to kill the deer without spooking them first).
As long as they don't charge just mash the group up or disband buttons to cut them down. As with most of the achievements in this game it's easier to wait until big pass mode is unlocked.
