Elites are actually really rare in this game I found, having only killed 4 naturally in my 8hrs played when I was nearly finished with everything else.
Elites are only visible by the word 'Elite' over their head when you attack them so keep an eye out, you can sometimes miss it. When you find one (I managed to find an elite as early as within the first 20 seconds of a level which was perfect), kill it, quit to main menu, and then continue run which always places you back at the start of your current level. The Elite will always be in the same position so just need to repeat this 20 times.
This will cut down on the grind needed at the end by a ton. If you find one even within the first few hours of playing, it's still worth doing this method rather than wait until the end and need to find one again.
