How to unlock the Dong achievement in TUNIC - Definitive Guide
To ring the western bell you will need to have progressed through the dark tomb, as this puts you out on the path to the West Garden. This achievement is story related and cannot be missed.
You will encounter several new enemy types here:
Chompignom (crocodiles) - shield up, strafe around them using 1-2 hits. There is a section with 3 of these all close together, chuck a bomb at them to get things started!
Fairies (flying robots) - shield up, freezing shots will bounce off. Laser shots will hurt your stamina. Faeries tend to stop moving immediately after a shot, move in quickly for a hit. Use the A+X ability to dive and swipe them if you’re struggling to get close. Keep your eyes peeled for the diamond shaped holes in the environment, as this is where they spawn from and are typically vulnerable for a quick kill if you get there as they spawn.
Rudeling (knights) - the unshielded ones are straightforward. The shielded ones you should approach to bait their attack and then back away just out of range. As soon as their swipe misses you, go in for 2-hits, and rinse repeat.
The magic dagger (freezes stuff) can be found in the south east part of the map, over some boards bridging the walkways of the environment together. You’ll have to beat away a group of chompignons and rudelings - which can be tricky whilst you’re still underlevelled. Use bombs!
The path for this area follows a broadly anti-clockwise pattern, albeit with a bit of a reverse S shaped snaking path inhabited by crocs and faeries.
Eventually (once you’re past the 3 crocs, just before the boarded walkway mentioned above) you will find your way up and on to the bridge like walkways. There will be rudelings posted around here. Head south for a save shrine. Then head all the way north. You will encounter a croc and a beefy knight. Go straight to the knight and get in a 3-hit combo. Roll in to him and get off another combo and (assuming you’ve levelled yourself) he should be dead. Leaving you with the croc. Shield up and strafe, using 1-2 hits, rinse repeat.
Now it’s time for the first boss, the Garden Knight. This is the first real skill wall the game throws at you, and initially might seem pretty much impossible.
The main thing is to take it slow and steady, don’t try to melt the guy - because you won’t be able to, and you’ll just get spanked by him.
His moves are as follows:
3-hit slam - dodge sideways, alternate directions between each hit. If you’re close enough get in 2 hits only and let your stamina recharge. Probably his most used attack.
3 shot burst from his staff-come-shotgun - he tends to do this more if you stay at range. You should survive all 3 hits with your shield but your stamina will be VERY low. Try to strafe sideways, at the right range his shots will miss you. If you tanked the hits, you will want to unshield ASAP for stamina recharge. If you are close to him when he starts this attack it’s best to get in closer and strafe sideways and you can actually avoid being hit completely and get in some cheap shots whilst he’s firing. Just don't get greedy and ensure your stamina is recharged so you can dodge away when the time comes.
Swipe, uppercut - back away from the swipe, as the uppercut comes you should dodge in to close range and get in 2 hits, 3 if you got in there quickly.
Once you reach the final health section he will reach second phase. Essentially he does his attacks MUCH quicker together. Stamina management is really tricky here and you will likely need to retry a couple times. If you’ve got bombs, use them. If you picked up the magic dagger then it’s a good time to use it - but be aware it’s wind up time is quite long so time it wisely. It will afford you a 3-hit combo.
Once he’s dead you just need to proceed along the newly opened path and ring the bell.

Thanks sooo much for this perfectly detailled guide. If only other helpers were at least half as dedicated as you are. I don't like to point fingers but as an example of how not to write a guide just look at the one just before this one for the eastern bell:

Not sure if intended or not (using no death mode) but I had the fire ability equipped on my sword and my sword would not do damage to the garden knight, unequipped it mid battle and was then able to damage him.

Before reaching the West Belltower, you will encounter the Garden Knight boss.
When the boss slams the sword to side, it will swing directly in front of it side-to-side. Immediately move/dodge away from the boss and hold block. If the boss aims the sword, hold block while strafing to the side and moving closer to the boss for a few hits after the attack. Lastly, when the guardian raises the sword, it will slam down 3 times. To avoid these hits, dodge left or right 3 times before moving in for a few hits.
If you're having trouble, make sure you upgrade your stats at a nearby save point. Just walk up to the save point and press to bring up the inventory and offer the items in the bottom right corner. You can also get bonus damage on the guardian by collecting your body, causing an explosion.

Before heading to the Western Bell, head west in the overworld to find another key on the ground by a pretty strong enemy that you likely won't even be able to hit with its shield. Snag the key and open the locked door to the right, which is the Old House. Inside, you can head to the back and through some rooms to find the shield.
Now it's time to work on ringing the Western Bell. The next order of business is getting the Lantern. To do that you need to go beneath the well. Head to the western around of the Overworld, on the northern side, and you'll be able to follow a path around to a bridge you can drop, and a ladder leading down into a central opening. This takes you beneath the well. Go through this linear area, and at the end you'll find the Lantern on the edge a platform next to your first black obelisk. Pray at the obelisk (hold ) to activate it and unlock You hear a strange hum (10G). You're now done here and can return to the Overworld.
Your next stop is the Dark Tomb. The entrance is in the northwest corner of the Overworld, in a small slice cut out of the rock wall. With the Lantern you can now see in the dark inside. Head through this linear area to get back to the Overworld all the way on the west end, and follow the path to enter the West Garden. The West Garden is another linear area, and it has a new weapon: the Magic Dagger. This weapon isn't needed for story progression, and actually literally the only need for it in the completion is to get a single Secret Treasure for an achievement, otherwise I would say you could just skip it. But, it's off to the east of the area in a little cave marked on your map, so grab that, head through the area, beat the boss,
With the boss beaten, you can leave the West Garden and climb up the ladders to finally reach and ring the Western Bell.
