When you're choosing a level, you can press 
to select freeplay mode. Then pick a level of your choice and collect all 25 tomato wedges in that one level. These should be quite easy to get, especially if you have already completed some objectives in timed mode. Below is a video, which has all the freeplay tomatoes in the first level, Dos Bros Tacos.
