Yeehaw is the first boss you encounter. He is located on the bottom right on the map. He is one of the easiest and has 3 waves with 2 attacks.
First to start the battle, you just need to attack him. He will then jump off his chair. He has a toast gun that does little damage but can be avoided if you dodge roll. Another thing to watch out for is cops that will spawn on the left and right. They could be the donut, peach, or bacon.
After you hit Yeehaw a couple times he will jump back on his chair and you have to defeat a couple of cops first. He will then jump back down and repeat the same process.
On his final attack he shoots you with a sniper from his chair. You have to carefully dodge this and attack the cops until he jumps down again. Once he is down. Hit him a couple more times and the achievement will pop once he is defeated.

I think it's bugged or something because I already defeated the whole game and it still says I didn't unlock it

This achievement didn't register straight away, so I went into manage game and add ons and clicked on save data. Then on my profile picture and then selected delete everywhere. Had to reply the early game but finally unlocked.

This is the first boss of the game, and is located by first buying the pickaxe from the Dark Web, then going straight up through the first two rooms to reach a long hallway. Head through the left door to reach this boss fight.
Pretty much every boss fight of the first four works the same way: damage the boss while avoiding its projectiles, and after a set amount of damage the boss will jump back onto its perch in the center. You'll have to just survive and fight regular enemies and wait for the boss to jump back down. Rinse and repeat.
