How to unlock the The (Fourth) New Gold Standard achievement in Two Point Hospital - Definitive Guide

This guide is for those that have met the requirement of unlocking 81 Gold Stars, but it hasn't popped.
When my save data erased itself when I was on 68 Gold Stars, I was furious. I had to go through and complete the whole game again. So, when my achievement didn't pop on 81 Gold Stars, I was equally frustrated at the prospect of another 100+ hours playtime. However, this time there is an easier solution.
I went back to the first level, Hogspot, and selected Restart Level. It takes you through the tutorial again, but once I had cured 3 cases of Lightheadedness and gotten the first Gold Star for this level, my achievement popped immediately.
