How to unlock the Hall of Famer achievement in UFC Undisputed 2010 - Definitive Guide
The requirements for the Hall of Fame are spelled out in the Career Mode Coach's tab, under the Career Advice heading. Scroll down to "Hall Of Fame" and you'll see the requirements.
1. Be a member of UFC (not Amateur nor WFA)
2. Win 25 or more fights
3. Be a champion at any weight division at least once
4. Defend a belt five times
5. Have a CRED rating over 50,000
6. Win a Champion-vs-Champion special event
7. Have a popularity of Well Known or better
You do not have to defend your belt 5 times in a row, nor even in the same weight division. You merely need to hold a belt and successfully defend it. Granted, its a lot easier given the time constraints of the career mode if you can do it consecutively.
If you can manage to defend your belt 5 times, the story mode will eventually offer you the special event fight without any other effort by you. You will be very hard pressed to accomplish some of these goals without taking care of the popularity and cred prestige requirements along the way.

In career mode, you earn credibility ("Cred") for completing matches, sponsorships, etc. Once you are a champion and earn 50,000 Cred, the opportunity for this match will occur. You don't have to win, but you get another achievement if you do.
To make the UFC Hall of Fame:

I'm fairly positive I'm well past what you have described but I have not been offered the champ vs. champ match yet. I've been playing on the "Experienced" difficulty, I'm 23-7, I've won the light-heavyweight belt with my first title shot and defended it successfully 3 times after that. My "cred" is somewheres over 60,000 and my popularity is maxed out as well.
Were you asked to vacate your title? Did you? I was asked to move on to heavyweight, which I did, thinking that was just part of the story-line and that I would attain that title and be presented with a champ vs. champ match shortly after that. I'm thinking now that if I refused to vacate my belt I may have received this achievement opportunity quicker.

i'm pretty sure you have to have more than 3 title defenses. You should not vacate title. Also don't change classes after you have title, since u will lose title and everything. I stayed in the same class the whole time, and never switched classed or vacated my title. If you don't have a champion vs champion mach around year 2020, then u will need to restart career to get it.

Got the achievement today.
My stats were 31-0-0,>99999 cred> superstar rating
Don't lose a match and you should get it around the same time. I didn't do any of the extra options in career (sparring sessions video's, prediction of event, Basically anything the women asked me to do i said NO)
I defended my Light heavyweight title 5 times before i got the option to have a champion vs champion tilte match.
I changed classes from light heavyweight > Heavyweight after winning champion vs champion, I did just for new fighters, you don't have to change classes
I defended my heavyweight title 9 times before i got the email saying about Hall of FAME.I was inducted into the HoF 1 week before my next match. It won't pop untill after the ceremony.
Also a side note on your career:
If u clear cache and don't update game you will recieve more sparring points for your fighter.(50 max with update 100+ without update) weather you start new career or in full swing in your career.
Before the fight that gets you the achievement, Champ vs Champ, save game, update game so you can get a time stamp online(if you want one that is.)
Win the fight save game and delete update again, to carry on getting more sparring points for your charecter.
