How to unlock the It Slices, It Dices achievement in UFC Undisputed 2010 - Definitive Guide
This achievement requires you do enough damage to have the doctor come in and call off the fight, but not knock out your opponent. So, you have to use strikes that will not KO or TKO the opponent. The way I was able to do this was by getting into Single Collar Tie as BJ Penn (LB+Right Stick toward opponent) against a low ranked opponent. Once in the single collar tie, just mash Y.
Some problems that may arise are the opponent transitioning to a different position or you running out of time. If the opponent changes position, you can use the right stick to transition back or click the left stick in to disengage and try to re-enter the single collar tie. To help avoid running out of time, change the fight to five rounds. It shouldn't take this long, but it doesn't hurt to have that extra time.
Some problems that may arise are the opponent transitioning to a different position or you running out of time. I did this against Joe Stevenson since I knew he could be cut easily and the doctor stopped it in the first round.
The achievements glitched for me though as I got the achievement for winning a fight by all methods of stoppage but I didn't get this one.

Well that's weird. When I unlocked the first achievement I paused and went to make a comment on here saying that it didn't unlocked, but when they were showing replays of the fight the achievement popped for me there. Sorry, spoke too soon!

If the one you are having trouble with is doctor stoppage just take someone like Brock Lesnar that has a lot of power and use weak punches. Avoid moving the left stick while punching because it could cause a KO. Use either X or Y to continuously hit the same side of the opponents face. Getting the opponent into a clinch and using X or Y is also useful if the oppenent hitting you poses a problem. I was able to do this in the first round so time should not be an issue.

ive tried this so many times and it gets called by the doctor and still no achievement.

I used Dan Hardy vs. Chris Lylte.I got him in single collar tie and jabbed him untill the docter stopped the fight

While all other methods above will work, here is an alternative solution if someone isn't having much luck with the above solutions:
Justin McCully vs Pat Barry (Heavyweight) / Beginner / 3 Rounds / Exhibition
I was able to win this in the 1st Round (2:03) TKO
With McCully, just continually go for head punches 'LS' + 'X' / 'Y' from striking distance (some close range elbows are okay). I didn't worry too much about taking damage, but try not leave yourself too open. I found it best to come in to range, strike with a punch, then retreat. Rinse & Repeat.
You will soon notice a cut open on both sides of your opponents face (assuming you have taken it in turn to strike with X & Y). When the opponent starts rocking/gets back up after being knocked down - get into a clinch (RS or LB & RS), then push opponent against cage wall. Transition using RS to get into a position you can throw punches at their Head.
Most likely the fight will stop for the doctor to assess opponent. He will give the okay for fight to continue. Just get in the clinch again, push to cage wall & punch in head. The second doctor appearance will stop the fight.
Video below shows the striking range, and pinning against cage in clinch. Be sure to only use forward with the LS and X/Y - don't hold LB, or you will knock your opponent out. Also note, that once rocking - try avoid major head shots - you will likely end the match with KO. Once rocking, go for a clinch to work on opening up the cuts.

I tried a few of the other ideas above without success. The clinch and hook strategy is definitely the way to go. However, I either couldn't get two cut-checks before the end of the fight or I'd inadvertently KO the other fighter.
The easiest combo that I found was taking BJ Penn against Chris Lytle. Lytle cuts QUICKLY, so you should easily be able to get this cheevo within the first round or two on beginner difficulty.
Lytle has some power... but absolutely no ground game. He'll attempt to bully you against the cage the entire match. Whenever he gets you close to the cage, pull him into guard and back your way towards the center of the ring until the ref stands you up.
Rinse and repeat until referee calls time twice. Hope this helps.

If anybody is still looking to get this achievement, I had trouble using the BJ Penn vs Chris Lytle method. Instead, I chose Brock Lesnar vs Antoni Hardonk. I single-collar clinched, and backed him into the cage, throwing nothing but the short straight (). At 3:15, the doctor was called the first time. At 2:20 the fight was called, both in the first round. Hopefully this helps.
