How to unlock the Rich Unicorn achievement in Unichrome: A 1-Bit Unicorn Adventure - Definitive Guide
This achievement actually requires you to collect 1,000 coins. This can easily be done on the first two levels. Collect all the coins in first level (not the prologue), then continue to play the next level and get all the coins. Now you can pause, go to the main menu and start up the first level again.
Rinse and repeat this process until you reach 1,000 coins. The counter can be seen at the top right corner each time you collect a coin. Complete the level and the achievement will unlock.

Its worth mentioning that you do not need to save the coins or have that amount of coins on you for the achievement to pop.
Its cumulative, so you can spend your coins as you get them and it will still pop, it did for me.

Also worth pointing out you need to finish the level. I didn't read that the first time around and got concerned.

The trophy description is slightly misleading, implying you just need to pick up 1,000 coins (and is seemingly reinforced by the coins collected counter displayed at the end of each level); what it actually wants you to do is to get to that coin-counting screen between levels while in possession of $1,000 or more.
This can be ground out fairly easily, either at the start of the game or once you've completed it, by selecting the first Chapter and level (not the Prologue), clearing the first two levels, quitting to the menu and repeating. You'll net around $70-$100 per run, and it shouldn't take more than a couple of minutes; you can turn on Invincibility in the Options menu and just ignore the enemies if you wish (though they do drop small amounts of cash.)
