The parrying in this game is somewhat forgiving, but if you want to cheese this then I have a decent strategy, or setup.
Once you get a corrupted weapon (I took the sword, but the axe would be more effective) go and defeat all the big corrupted creatures on your map, each one gives you an item that increases the damage of the corrupted weapon by 1.
I was around 55 base damage with the sword after killing all of them.
Next go to the chip copier in the highway area and make 4 copies of the jump chip which increases jump attack damage by 50%, make 4 copies of the full health damage buff chip as well.
I also used 2 of the chips that increase damage but also increase damage taken as well as an attack cog.
When fighting the bosses go for jump attacks I was doing 800+ damage each attack. Each form of nightmare went down in 2-3 hits. Essence requires some dodging but you can beat it in about 5 hits.
Using the easier combat assist and more stamina assists will help as well, but don't use invincibility, you want know for sure when you get hit. If you do get hit pause and exit to menu and reload to try again from the save point.
