Actually you just need to avoid the traffic cones which causes added time to appear in bright red numbers, you can feel free to slam into anything else on the course, just as long as you don’t have added time showing you’re good.

You can go off the track limits: I got reset when I tried to go around the plane because I didn't want to risk hitting anything. Still got the achievement.
