The Dragon Shrimp is found in Gallo Tower. Per it's wiki entry, the Dragon Shrimp first appears as an "event" enemy, but later, becomes part of the normal waves of enemies. Dragon Shrimps only show up in Gallo Tower. They are the big bone-dragon enemies that are curled around like a shrimp. You will likely need at least two runs of this level to get enough kills for this achievement, but keep replaying the level until this unlocks.
