On the main menu, choose Olympic Games, then either Xbox LIVE Player Match or Xbox LIVE Ranked Match, then Create Match. Put two players and confirm. If you want to do it as quick as possible, choose the Ladies' 500 m Skating, as it is by far the quickest event.
The hardest part will be to wait for someone to join. Simply complete the event and you will get the achievement.

This can be done on either a Player Match or a Ranked Match. Simply choose any event with any number of players and finish it. It won't matter what place you're in, this will unlock once the event is over.

Simply host an online event or events. Choose Olympic games, and then choose either a player or ranked match and host the session. This achievement, as well as Online Olympian, will unlock once the session has ended.
