On the main menu, choose Olympic Games, then either Xbox LIVE Player Match or Xbox LIVE Ranked Match. I recommend creating a match, as you will unlock at the same time the Good Host achievement. Put two players and confirm. If you want to do it as quick as possible, choose the Ladies' 500 m Skating, as it is by far the quickest event.
The hardest part will be to wait for someone to join. Simply complete the event and you will get the achievement.
