Well, I tried a few settings including
2 Games 2 Sets Easy
2 Games 2 Sets Normal
1 Game 1 Set Easy
1 Game 1 Set Normal
3 Game + TB 1 Set Easy
3 Game + TB 1 Set Normal
and none of them worked.
It turns out that the default settings are the one under the Options --> Settings --> Game Settings --> Tournament Mode Settings from the main menu. I had changed them to Very Easy Difficulty and 1 game whilst unlocking King and Duke and had never changed them back. I chose Normal Difficulty and 2 Games here then went back to Exhibition Mode. I played a mixture of the various amounts of Games/Sets/Difficulties in exhibition mode and everything unlocked as it should so it seems that the settings you choose in Exhibition mode make no difference at all, just what the Tournament Settings are...even though you are not playing in Tournament Mode !!!

I can confirm that this is true about the tournament settings. I have to warn anyone though that if you are explicitly going for this achievement you may have to check your settings each time to make sure that it's still set to Normal. This game is glitchy and often reverts the difficulty setting back to Easy, so it may be a good idea after each match to check the Tournament Mode Settings and make sure it's still on Normal/2 Games.

Having tried numerous sites to tell me what the actual default settings are I can tell you my achievement popped up after winning with the following settings:

com level-normal

This works in a player match online with these settings:
games-2
sets-1
server-front
com level-normal
you can stack it with beat all the women players as well just have your boosting partner pick the same woman player as you and repeat for all women players.
Alternatively you can do it offline in an exhibition match with these settings.
