Well, I tried a few settings including
2 Games 2 Sets Easy
2 Games 2 Sets Normal
1 Game 1 Set Easy
1 Game 1 Set Normal
3 Game + TB 1 Set Easy
3 Game + TB 1 Set Normal
and none of them worked.
It turns out that the default settings are the one under the Options --> Settings --> Game Settings --> Tournament Mode Settings from the main menu. I had changed them to Very Easy Difficulty and 1 game whilst unlocking King and Duke and had never changed them back. I chose Normal Difficulty and 2 Games here then went back to Exhibition Mode. I played a mixture of the various amounts of Games/Sets/Difficulties in exhibition mode and everything unlocked as it should so it seems that the settings you choose in Exhibition mode make no difference at all, just what the Tournament Settings are...even though you are not playing in Tournament Mode !!!

Thank you! i just unlocked this and the beat all male players using this method. to confirm, it works if you set those game settings to what he has here (normal - 2 games) and then play exhibition on 1 game - easy. i just started as 1 played against 2 and moved through the list. unlocked both at the same time. great solution davehx!

Having tried numerous sites to tell me what the actual default settings are I can tell you my achievement popped up after winning with the following settings:
arena-dubai
games-2
sets-1
server-front
com level-normal

This shouldnt really need explaining but just in case there are some people stuck on this. play a simple Exhibition match with each male player and do not change any settings. play against whoever it doesnt matter. this is also the same for the play with default settings with all pro women players.

This works in a player match online with these settings:
games-2
sets-1
server-front
com level-normal
you can stack it with beat all the men players as well just have your boosting partner pick the same man player as you and repeat for all men players.
Alternatively you can do it offline in an exhibition match with these settings.
