Voodoo Vince: Remastered

The very first area you can unlock this achievement in is the Docks. You'll be required to pass this enemy to complete the object anyway, so just fight him with basic punches and spin attacks until he dies. He only takes damage when he's in his casual stance and not when he's winding up for an attack. Land a dozen hits or so and he'll go down and explode like normal.

What worked for me, is lure him to a abyss or water (in the docks). I did that in the carneval level. It was more luck, but it also counts for the achievement.
