You can check your stats on how many kills by going over to progress > challenges > (on the far right) stripe > 'ARTFUL AMBUSHER' is the name of the challenge however this is for 200 claymore kills however you only need 30 for the achievement to pop. But the tracker on the challenge will have a number out of 200 eg 24/200 so I know I then only need 6 more.
I suggest playing 'Storm' place your claymores on the objective works most effective when defending as the oppenents need to run into the area and in a game you could get from 1-15 kills all depends on your placement, how often you die as you can only place 1 down after you have died. And how many oppenents rush the objective.
The class I used was Enginer I'm not sure if any other classes have them but he uses an SMG which I quite like.

Join a game of "Free for all" as the engineer class, and try to place your claymores in doorways. Fast and easy kills.

Best thing is to play the "storm" game mode and plant claymores on the point or by the doors they have to come through. Once you get 30 the trophy will pop at the end of the game. There is a way to check the progress by looking under profile then classes.
