How to unlock the Demonstration of Purity achievement in Warhammer 40,000: Inquisitor - Martyr - Definitive Guide
Chaos Engine Elites are fairly scarce in the campaign, but can be found regularly in the Void Crusades. Which works out, as I think* the crusades are the fastest way to get XP and level up towards level 100 for Journey of Faith.
*Probably not. I've summarised my own experience with some information provided in the comments in a spoiler as it's not entirely relevant to this achievement.
You'll need to play through the campaign some until you unlock the Void Crusades and Uther's Tarot.
As for actually making progress, you assign you Acts of Faith at the 'Faith Abilities' station next to Caius Thorn on the bridge. I assigned 'Divine Grace' to the button. Most melee weapons have a free slot by default, which is what I used. Not sure about ranged.
When you find an engine, whittle down it's health and, when it's nearly dead, activate your Act of Faith before you deal the killing blow.
Achievement progress tracks, so you can keep and eye on it there.
I unlocked this achievement when I was around level 70, and I forgot or mistimed activating my Act of Faith several times. So, there are ample opportunities to get this as you play crusades.
Good hunting. For the Emperor!

Depending on your story progress, Robby7430 has pointed out that there is a story mission where you come across an engine right at the start. Simply restart the mission once you have killed it and repeat.
The mission in question is "The Martyr: Chapter 3 - The Secret Weapon". Goku Black confirmed it's the 3rd part, entitled "Uther's Scriptorium".
prowlerdante has mentioned that here are 2 in a mission in Chapter 5 too, unsure which one.
Most of the chaos enemy missions have engines as boss types. Specifically, you want Nurgle dreadnoughts and the Decimator/Impalers. 2 of the 3 enemies in Hunt missions are usually engines. At higher levels, I've even been getting 3 engines on some missions. The mission in question is "The Martyr: Chapter 3 - The Secret Weapon". For those that haven't progressed far with your battle sister story I reccomend playing "The Martyr: Chapter 3 (mission: The Secret Weapon)"
It has a chaos engine elite close the beginning of the mission. Progress thru and do as Rossco says above killing the elite while under an act of faith. After killing it just restart the mission. Thru this method you still earn XP and progress towards the said achievement. Just quit the mission instead of completing it to continue using it.

Robby, that is interesting. I tried that exact mission but my progress didn't count. Must have been an Xbox bug. I've added a note about it. Cheers.
