How to unlock the Jack of all trades achievement in Wartales - Definitive Guide
This achievement is much easier than it sounds, as apprentice is only the second rank for professions. Some of the jobs here have minigames associated with them, but after some testing I can confirm that they only effect reward payouts, not experience gain. You can freely swap jobs within the party menu by clicking on their job and selecting a new one, but I advise to have at least one member in each job, it makes resource gain in the later game easier.
Alchemist: One of the easiest jobs, just craft a couple items using alchemist benches within town apothecaries. After about 5 items crafted you'll go from novice to apprentice.
Angler: Another easy job, on the map you'll see some flashing spots near water sources. Just click on them and you'll have the option to fish. Fishing requires having fishhooks, which can be bought or crafted at a camp workbench for 1 iron ore. The minigame here is simple, just keep the fish between the red borders by clicking your mouse. Fishing 3-4 times will make you become an apprentice, so this can be done on a single fishing spot.
Bard: Fairly easy, but you need to craft a lute before you can gain xp to this job. Finding a lute is unfortunately luck based since you don't start with the blueprint. I found my blueprint in a tavern for sale, but they also spawn in tombs sometimes as random loot. After finding the lute blueprint and building it, head to a tavern and play a song. The minigame here is akin to guitar hero, but nowhere near as hard. Just click the buttons when the note matches up and you'll be fine. After playing your lute twice you'll become an apprentice.
Blacksmith: Also a simple job, but the only way to level it is in town blacksmith shops. Click the anvil and craft something, after about 2 items crafted you'll become an apprentice. The associated minigame is also very simple, just click the metal plates when they glow so you can craft higher quality gear.
Cook: Akin to the alchemist job there is no minigame here, just assign a cook to a camp cooking pot after crafting one (requires iron ore, sandstone, wood, and some krowns) and crafting some food. Bread costs 1 wheat and 1 salt, so craft some of that. After crafting some food your novice cook will now be an apprentice.
Miner: Simple job and simple minigame. Inside of caves you'll find some ore veins. Just click them to start the minigame, where you have to try to click on a circle when a smaller green circle is inside it. Again, doesn't matter if you actually perfect the minigame or not unless you want more iron since xp gain is the same.
Scholar: This is harder to level since it's luck based whether you find the item or not. Sometimes when camping you'll have strange rock formation in your camp. If you get one then you click and drag a scholar to it to assign them to study it, and they'll gain xp this way. No minigame, you just need a bit of luck to get the rocks to appear. After 2 rests with them assigned they'll level to an apprentice.
Thief: This is very easy to level if you're willing to steal. Go into a town and go to any store, click steal, then click on the item you wish to nab. Thankfully the store clerks don't care if you steal so you'll only gain suspicion. Be warned though, too much suspicion turns into a wanted status, and that means guards will come after you to make you give the items back or pay a fine. Alternatively you can lockpick chests scattered about the map using lockpicks to gain xp for this job. Either way, lockpicking 2 chests or just stealing some cheap items will make you an apprentice quickly.
Tinkerer: Akin to Alchemist and Cook there is no minigame here, you just craft some stuff. Open up the workbench you start with in your camp and craft whatever, after around 5 items crafted you're now an apprentice.

How do you get the scholar job? I found the rock multiple times, but not the profession itself

To get the scholar job you need to click on the job icon on a party member and select the scholar job. You can freely change jobs whenever you want, no need to have the items to work as that job first.

The Scholar profession didn’t become available to me until I went inside the Tiltren Tomb at the SW part of the map. Once I clicked on the first puzzle I was finally able to assign someone as a scholar.
