All you have to do is kill 1000 combatants, animals, etc.
Be careful as you approach the 1000 point and make a SAVE around 990 that way if the achievement doesn't unlock the first go around , you don't have to start a new game or go back to an older save with less kills.
Camping in the desert early on recovers lost health, yields 1-5 enemies, but doesn't replenish ammo. Be sure to mix in with missions to earn cash & loot to keep up supplies. Highpool, Ag Center, Needles and to some extent the Nomad Camp have low level battles to be had in them or the sub maps.

You'll get a large chunk of this done playing through the game normally. I unlocked this at Guardian Citadel without spending more time than necessary in any location or specifically looking for fights to level up. You can play after the game is complete, so you'll always have enemies to kill if you need to grind later on.
