Normal difficulty in this game isn't much harder than easy. The skill of the AI doesn't really improve much it's more just they are both stronger offensively and have more health.
I would suggest doing some merchant runs after saving up yen to purchase ancient amulets from the accessory merchant at the posting station then killing him to get your money back , leave amana and repeat. You can max your health at 9,999 before finishing normal difficulty increasing your chance of success.
In the harder difficulty you have a better chance at finding good swords, personally I thought kiries sword was good as it had a double back flip kick I could juggle enemies relatively good with. Either way getting these weapons in normal helps towards later achievements and they are usually stronger than the ones you found in easy if you started there. You shouldn't need an overly powerful weapon to complete this, but it's good to find one in preparation for hard.
Any ending is good for normal because you want to do a different one for each difficulty considering you need 21 different endings, and you will only want to do so many of these playthroughs, trust me.
