Vultures are very easy to find and will usually come around to feed on any corpses you leave behind. Once you spook one it'll start to fly away hovering close to the ground at first. Run up to it, jump and kick it before it gets too far away.

A really easy location for this is the starting area for the second journey! Plenty of vultures around the tree that sit down on the fence and smaller trees surrounding it as part of a set-piece.

I didn't even have to jump. I ran up to one that was on the ground, kicked it and the achievement popped.

Can be done in any outside environment where you can kill animals or humans to lure in Vultures. After a few minutes the vultures will appear to feed on the dead. Do your best to jump and kick them before they land. I found standing on higher ground such as a rock helped. This can also be done in Grackle, see my video for more detail:
Basically kick a velture, because if they are on the ground and you move closer to them, you can kick them and it will count for this achievement because they are beginning the flying animation even if you don't see them on the air. If they are flying, kick them by jumping and pressing the kick button: it's not easy, an elevated position (like a rock) can help.
A great spot to get this achievement is the cage where you find the blacksmith in the Bounty Hunter journey: open the cage asap, continue to explore the location but keep an eye on the cage - sometimes a velture will remain trapped inside of it. Enter the cage, jump and kick it - it cannot escape and the space is very small.
